This is a super filling meal that I love to serve over either rice or mashed potatoes. I guess I’m different because I don’t add bread crumbs or rice in my meatballs.

I like my meatballs somewhat firm and since I usually have rice or mashed potatoes on the side I just don’t find it necessary.

To ensure that the meatballs remain juicy, roll them just enough to create the shape of a ball and try not to press them too tight.

Obviously, the tighter you press the meatballs when rolling them, the firmer the meatballs will become once cooked.

Don’t worry, they will still hold their shape once you start cooking them.

After the meatballs are formed into golf ball size, brown them in a skillet in a little olive oil. In my opinion, this process locks in the flavor and keeps the meatballs firm on the outside.

The meatballs below may look like they are ready to eat, but not quite. They are only seared on the outside.

Once the gravy is prepared and poured over the meatballs, reduce the heat, place a lid over your skillet and let them simmer for 20-30 minutes.

Another method is to place the meatballs in an oven-safe dish, covered, and simmer the meatballs in the oven. However, they can also be prepared from start to finish on the stove.

Of course, you want to taste the gravy at this point.

As the meatballs simmer they will flavor the gravy, but I always add a little extra seasoning at this point.

You all know I’m a southern girl so I like my gravy a little thick. Therefore, if you prefer your gravy thinner gravy, add extra hot water 1/2 c at a time.

After adding the water, allow the gravy to simmer for a few minutes before adding any additional water. Meanwhile, the gravy will thicken as it cooks down.

Once you find a sweet spot for your gravy consistency, remove from the heat and allow to rest for 10-15 minutes before serving.

Trust me, the extra few minutes definitely give the spices time to really set in. After all, you can’t rush greatness so it’s well worth the wait!

Beef Meatballs In Mushroom Gravy

Ingredients

  • 1 1/2 lbs of ground beef
  • 1/4 c of bell pepper
  • 1/4 c of yellow onion
  • 1/2 tbsp of minced garlic
  • 1/2 tbsp of Lawry’s seasoning salt
  • 1/2 tbsp of onion powder
  • 1/2 tsp of garlic powder
  • 1/2 tsp of garlic salt
  • 1 tsp of pepper
  • 3 tbsp of olive oil
  • 3 stalks of green onion optional
  • 5 tbsps of olive oil
  • 4 tbsps of flour
  • 1 tbsps of onion
  • 1 tbsp of bell pepper
  • 3 baby portabella mushrooms without stems
  • 2 1/2 cups of hot water
  • 1 (10 1/2) ounce can of Campbell’s cream of mushroom soup
  • 2 c of hot water

Instructions

  • To prepare meatballs:
  • Mix beef, peppers, onion and seasonings in a bowl. 
  • Roll beef into golf ball sized balls.
  • In a large skillet, heat a few tablespoons of oil. 
  • Once the oil is hot, add meatballs to the pan. 
  • Cook until meatballs until brown, rotating sides every few minutes. 
  • Once meatballs are brown drain excess oil. Set to the side until gravy is done. 
  • To prepare gravy: 
  • In a large skillet, heat oil. 
  • Add bell pepper and onions to skillet. Sauté for one minute. 
  • Next, add mushrooms and sauté for one minute.
  • Add flour and mix with vegetables. Spread mixture evenly and cook until brown, stirring frequently. 
  • Once brown, add one cup of hot water and stir. Add an additional cup of water and stir. 
  • Add cream of mushroom soup and stir. 
  • Reduce heat and simmer for 5 minutes. 
  • If gravy is too thick, add more water 1/2 c at a time. 
  • Pour gravy over meatballs and simmer for about 20-30 minutes. Then serve and enjoy!
