I love to make recipes like these, especially in the wintertime when I’m a little lazy and feeling like a homebody. Doesn’t wintertime just make you want to stay in bed all day and watch movies? At least that’s how I feel when its time to go to work lol.
As you can see, we made this chili in the Dutch oven. The Dutch oven is a wonderful cooking tool to make great dishes like chili, fried chicken, cook roast, etc. It cooks fast and it holds a lot of food.
This recipe was inspired by a friend of Charlotte’s. She knows a chef who shared this recipe with her and we put our own spin on it. She had his chili recipe and fell in love with it so we just had to make it. We are so grateful for the inspiration because this is a delicious chili recipe.
For those who love spice, you will really like this recipe. The chili powder and cayenne pepper included in this pot of goodness really gives it a kick. If you are not into spice simply eliminate the cayenne pepper and perhaps scale back on the chili powder.
Also, the addition of the cumin and oregano gives this chili it a little twist so it doesn’t taste like everyone’s chili recipe. We served this chili up with a few saltine crackers and it did not disappoint!
So what else do you need to make this recipe?
For this recipe, you will need ground beef, onions, minced garlic, black pepper, chili powder, cayenne pepper, cumin, oregano, seasoned salt, tomato paste and kidney beans. The beef we used was 73/27.
I don’t suggest using super lean beef for this recipe. The fat adds flavor. You can always drain most of the oil from the beef for adding the other ingredients.
You want to brown your meat first and drain any excess oil before adding your other ingredients. The kidney beans will be added last. You can add them about 15 minutes before turning off the heat.
The beans are already cooked so they just need some time to simmer, soften and soak up the flavors of the other ingredients in the pot. And that’s all she wrote! Hope you all enjoy!

- 2 pounds of ground beef
- 1 can of kidney beans
- 2 medium onions- chopped
- 3 tbsps of minced garlic
- 2 tbsps of tomato paste
- 3 tsps of black pepper
- 4 tbsps of chili powder
- 3 tbsps of sugar
- 1 tbsp of cayenne pepper
- 1 tbsp of seasoned salt
- 1 tsp of cumin
- 1 tsp of oregano
- 1 1/2 c of water
- Saute the beef and onions until the beef is brown.
- Remove the beef from the heat and drain the excess oil.
- Return the pot to the stove and season the beef with minced garlic, black pepper, chili powder, cayenne pepper, cumin, oregano, seasoned salt and tomato paste and stir.
- Then add the water to the pot and stir.
- Simmer for about 10 minutes on medium heat.
- Add the kidney beans to the pot and simmer for about 15 minutes.
- Remove from heat and enjoy!
