Creamy Pineapple Parfaits
These Creamy Pineapple Parfaits are made with a mixture of yogurt, cool whip,
semi-blended pineapple and are topped with granola clusters.

Here’s the story behind these parfaits. I have been on a fruit kick lately. It’s getting warm and there is nothing like a cold piece of fruit to cool you down.
I needed a dessert. Something sweet, a little thick with a little crunch.
I have been eating Fage yogurt for a while and I love it. I stumbled upon this yogurt when I was away for a work trip a few years ago and fell in love with it.
Since I started eating it, I have been eating it plain most of the time but needed to switch things up.
You can easily use your own favorite Greek yogurt and they will still turn out great; however, I do recommend using Greek yogurt because of the texture.
Greek yogurt is so much thicker than regular yogurt, which makes it great for this type of recipe.
Greek yogurt is not sweet whatsoever, so we are adding sugar to this recipe. We also used Cool Whip to lighten up the Greek Yogurt.
Fresh pineapples were used for this recipe, but you could use a can of crushed pineapples!
You will need:
- Pineapple
- Greek yogurt
- Extra creamy cool whip
- Granulated sugar
- Granola
Steps to make this recipe:
In a large bowl, add the yogurt, cool whip and granulated sugar. Blend well using a hand blender or whisk.
Using a mixer, blend pineapple (to consistency pictured above). In a short glass, add 2/3 tbsp of pineapple and 2 tbsps of the yogurt mixture, beginning and ending with the yogurt mixture.
Top the parfaits with 2 tbsps of granola or desired amount.
How do you like your parfaits? Somewhat cold? Super cold?!
I like my parfaits super cold so after I put the mixture together (without the granola) I refrigerated it for an hour.
Be sure to add your granola to your parfait right before serving so that it doesn’t get soggy.
No fancy granola was used for this recipe. My favorite granola is the store brand from Kroger.
It’s an oat and honey granola with slivers of almonds. It’s really tasty, but not overly sweet.

- In a short glass, add 2-3 tbsp of pineapple and 2-3 tbsps of yogurt mixture, beginning and ending with the yogurt mixture.
- Top parfaits with 2 tbsps of granola or desired amount.
