Sour Cream and Garlic Smashed Potatoes

Sour Cream and Garlic Smashed Potatoes are garlic roasted new potatoes
lightly smashed and tossed in sour cream.

So I was cooking meatballs one night and wanted something a little different to go with them.

I typically eat my meatballs with jasmine rice, but I remembered that I recently purchased a bag of new potatoes, also known as red potatoes, that I still needed to cook.

Obviously, no need to let them go to waste!

New potatoes are so flavorful that there is no need to remove the skin.

Furthermore, the skin gives the potatoes a little extra flavor and texture. The skin is completely okay to eat as long as it is washed thoroughly.


Sour Cream and Garlic Smashed Potatoes

You will need:

  • Small to medium-sized new (red) potatoes
  • Minced garlic
  • Garlic salt
  • Olive oil
  • Full fat sour cream
  • Salt
  • Black pepper

Steps to make this recipe: 

Preheat the oven to 350 degrees. Rinse the potatoes and place them in an oven-safe dish. In a skillet, heat olive oil over medium heat.

Saute garlic in skillet for about one minute. Remove from the heat and pour the mixture over the potatoes.

Season the potatoes with 1/2 tsp of garlic salt. Cover with foil and roast the potatoes in the oven for 45 minutes to an hour. Remove the potatoes from the oven once they have softened.

 

Remove the potatoes from the dish and reserve the remaining oil. Smash the potatoes using a potato masher or the end of a glass.

Place the potatoes in a bowl and pour half of the remaining oil over potatoes. Season the potatoes with 1/2 tsp of garlic salt, 1/2 tsp of salt and 1/2 tsp of black pepper.

Add the sour cream to the bowl and stir ingredients together.

It is important not to over mix the potatoes so they are smashed and not mashed. And don’t worry, adding the olive oil into the potatoes will not alter the texture of the potatoes.

The olive oil with the added minced garlic actually infuses more flavor into the potatoes.

 

After all, if you didn’t use oil, you would probably use butter.

The green onion pictured in this photograph is for garnish, but blending them into the potatoes makes them taste even better!

  • Place the potatoes in a bowl and pour half of the remaining oil over the potatoes.
  • Season the potatoes with 1/2 tsp of garlic salt, 1/2 tsp of salt and 1/2 tsp of black pepper.
  • Add the sour cream to the bowl and stir the ingredients together.
  • Serve and enjoy!
