Sweet Potato Pie
Sweet Potato Pie is a must have during the holidays! Not only is it tradition, but there is something about Sweet Potato Pie that makes the holidays feel like the holidays.
My mom and I were having a conversation during Thanksgiving about tradition. She said that when she was growing up, dishes like sweet potato pie, candied yams, 7 Up Cake and Buttermilk pie, were mainly eaten during the holidays.
They were reserve as special times so there was plenty of food to be eaten, cooked and shared. Also, families could not afford to make this abundance of food all throughout the year. So hence, we “cook the whole house” for the holidays each year.
Her story reminded me of how fortunate I am and probably how fortunate many of you are…
I may not have everything that I want, but I have everything that I need and I’m grateful for that. Part of the mission of this blog is to bring people together around what we all have in common, which is food and I truly mean that. Food brings people together at work events, family functions, events with friends, etc.
Think about it, if you invite people over and they know there is going to be some good food, they always show up. It doesn’t have to be fancy or made completely from scratch, it just needs to be cooked with love. That’s what makes food come out well every time.
So we did just that with this sweet potato pie…
Once again, we used store-bought crust. We used the Pillsbury Regular Pie Crust. Each package comes with two pie shells, which is perfect since this recipe will make two pies. I used a mixer to blend the filling together to make a creamy pie filling. It’s really simple….
Just boil your potatoes for about an hour. Then remove them from the pot and allow them to cool for about 30 minutes.
Then remove the skin from the potatoes, chop in large pieces and add them to your food processor. Add everything, but the eggs and blend together until the lumps dissolve. Add the eggs last and you’re done. If you prefer a firmer pie filling, adjust the flour and the cooking time.
My grandmother is the sweet potato pie baker in the family. I always thought they we were so hard to make and that I would be in the kitchen all day. Now if we were making the pie crusts from scratch and making several pies, this process would take much longer. But to simply make two pies, It was not hard at all.

- 4 c of cooked sweet potato (2 large sweet potatoes)
- 1/2 c of granulated sugar
- 1/2 c of brown sugar
- 1/2 tsp of salt
- 2 whole eggs
- 1/2 tsp of nutmeg
- 1/2 tsp of cinnamon
- 1 tsp of vanilla extract
- 1 stick (1/2 c) of butter- cubed
- 1 tbsp of flour
- 2 store bought pie crusts
- whipped cream (optional)
- Rinse sweet potatoes thoroughly.
- Place potatoes in a large pot and cover with water. The water should rice about an inch over the potatoes.
- Boil potatoes for about an hour or until they begin to soften.
- Remove potatoes from the pot and allow to cool for about 30 minutes.
- Preheat oven to 350 degrees. Remove pie crusts from the freezer. (They must stand for 10-15 minutes before adding the filling.)
- Peel skin off of the potatoes and chop into large pieces.
- Place potatoes in large mixer. Add sugar, salt, butter, cinnamon, nutmeg, vanilla extract and flour.
- Mix until blended, then add eggs and mix until smooth.
- Pour filling into each pie crust.
- Bake uncovered for 45 minutes or until crust is golden brown.
- Remove from oven and allow to cool before serving.
